Ingredients for Mutton Seekh
½ kg Mutton minced / Mutton Kheema
1 cup Coriander leave / Hara Dhaniya
1 cup Mint leaves / Pudina
1 Onion / Pyaaz
3 Green Chilli (or as per your taste) / Hari mirch
1 & ½ table spoon Ginger garlic paste / Adrak lassan paste
1 tea spoon Cumin powder / Jeera powder
1 tea spoon Black pepper powder / Kali mirch powder
1 tea spoon Garam masala
1 tea spoon Red chilli powder / Lal mirch powder
1 tea spoon Salt (or as per your taste) / Namak
1 tea spoon Coriander powder / Dhaniya powder
½ cup Gram flour / Besan
3 table spoon Oil / Tel for frying Mutton seekh kabab
Water if required to grease hand for seekh preparation
Thick stick for seekh preparation
Small charcoal for smoke
Few groups Ghee or Oil for smoke
Toothpick to lock seekh rolls
Preparation for Mutton Seekh kabab
· Take a
mixer Jar add Coriander leave / Hara dhaniya, Mint leaves / Pudina, Onion /
Pyaaz & Green Chilli / Hari mirch grind all roughly semi thick.
· Then add
in it Mutton minced / Mutton Kheema, Ginger garlic paste / Adrak lassan paste,
Cumin powder / Jeera powder, Black pepper powder / Kali mirch powder, Gram
masala, Red chilli powder / Lal mirch powder, Salt / Namak & Coriander
powder / Dhaniya powder grind all roughly semi thick.
· Remove the
Mutton Seekh mixture in a bowl add in it Gram flour / Besan & mix it well
to combine adding gram flour (besan) improves binding.
· Now lets
start making mutton seekh kabab take a small mutton seekh kabab mixture in your
hand make small roll of it & insert a thick stick in it gently press the
mixture on the stick & make seekh kabab.
· Once the
seekh kabab is ready gently slide the seekh out of the stick & keep its
aside.
· Follow
same process to make rest mutton seekh kabab.
· If you
require you can dip your hand in water to make it greasy to prepare mutton
seekh kabab.
· Take a
small charcoal & place it on stove to burn it for smoke.
· Take a pan
add oil / tel in it & gently place the mutton seekh kabab in it & fry
on medium flame till light brown in colour from both the side gently reverse
the side.
· Once
Mutton seekh kabab are fried from both the side cover lid & continue
cooking on low flame for 2 to 3 minutes.
· Follow
same above steps to fry all mutton seekh kabab.
· Once all
seekh are ready place all in the same pan leaving the centre in the pan.
· Place a
small bowl in the centre of the pan place in the bowl burning charcoal add few
drops of ghee or oil on the charcoal for smoke & cover lid for 5 minutes to
give smoke to our mutton seekh kabab.
· Uncover
lid after 5 minutes & our mutton seekh kabab are ready to enjoy.
· Now if you
want you can make paratha seekh rolls for the same.
· Take a
paratha place in its centre our mutton seekh kabab add on top our it our
chutney garnish with raw onion & mint roll the paratha & lock it with
toothpick.
· Done!
Yummy Mutton seekh kabab paratha roll is ready to serve.
