Vada pav recipe

 


Ingredients for Lassun Dry Chutney

1 table spoon Oil / Tel

½ cup Peanuts / Mungfali

4 to 5 pcs Red chilli / Lal mirch

8 to 10 Garlic cloves / Lassan

½ cup Desiccated coconut / Sukha Nariyal

½ tea spoon Salt / Namak

 

Preparation for Lassun dry chutney

·       Heat a pan add oil in it than add peanuts / mungfali in it & roast it for 2 to 3 minutes on high flame ster continuously to avoid burning after 2 to 3 minutes remove it & keep aside in a bowl.

·       In the same pan add red chilli / Lal mirch and fry the chilli for 1 to 2 minutes on medium flame ster continuously to avoid burning after 1 to 2 minutes remove it & keep aside in the same bowl along with peanuts.

·       In the same pan add Garlic / Lassan and fry the Garlic for 1 to 2 minutes on medium flame ster continuously to avoid burning after 1 to 2 minutes remove it & keep aside in the same bowl along with peanuts & red chilli.

·       In the same pan add Desiccated coconut / Sukha Nariyal and fry the Desiccated coconut for 1 to 2 minutes on low flame ster continuously to avoid burning after 1 to 2 minutes remove it & keep aside in the same bowl along with peanuts, Red chilli & Garlic.

·       Then take a mixer place all the above fried ingredients add Salt / Namak in it & grind roughly once done our Lassan dry chutney for Vada pav is ready keep it aside.

 

Ingredients for Special Vada Pav Green Chutney

2 inch Ginger / Adrak

3 Garlic cloves / Lassan

½ tea spoon Salt / Namak

3 Green Chilli / Hari Mirch (or as per your taste)

1 Cup Coriander Leaves / Hara Dhaniya

2 table spoon Water / Pani (or as required)

 

Preparation for Special Vada Pav Green Chutney

·       Take mixer grinder add Ginger / Adrak, Garlic cloves / Lassan, Salt / Namak, Green Chilli / Hari Mirch (or as per your taste), Coriander Leaves / Hara Dhaniya & Water then grind it to smooth paste once done special Vada pav green chutney is ready keep it aside.

 

Ingredients for Vada Batter

2 Cup Gram flour / Besan

1 tea spoon Salt / Namak

1 tea spoon Turmeric powder / Haldi powder

1 pinch Baking Soda, Soda khar

½ tea spoon Carom Seeds / Ajwain

1 cup Water / Pani

 

Preparation for Vada Batter

·       Take a bowl add Gram flour / Besan, Salt / Namak, Turmeric powder / Haldi powder, Baking Soda, Soda khar, Carom Seeds / Ajwain (Crush it with your palm) mix it well to combine then add water in it & mix it to form semi thick batter once its ready keep it to rest for minimum 30 minutes don’t skip this resting process.

 

Ingredients for Vada Aaloo Bhaji

2 table spoon Oil / Tel

1 tea spoon Mustard Seeds / Rai

1 pinch Asafoetida / Hinge

Curry Leaves / Curry Patta

1 table spoon Ginger – Garlic & Green Chilli paste / Adrak – Lassan aur Hari mirch paste

1 tea spoon Turmeric powder / Haldi powder

1 tea spoon Salt / Namak (or as per your taste)

4 big Potatoes boil & Smoothly Mashed / Aaloo

1 cup fine chopped Coriander leaves / Hara dhaniya

1 Lemon juice / Nimbu juice

 

 

Preparation for Vada Aaloo Bhaji

·       Heat a pan add oil, Mustard Seeds / Rai, Asafoetida / Hinge, Curry Leaves / Curry Patta, Ginger – Garlic & Green Chilli paste / Adrak – Lassan aur Hari mirch paste roast on medium flame for 1 minutes.

·       Then add in the same Turmeric powder / Haldi powder & Salt / Namak mix it well to combine.

·       Then add in the above boiled & smoothly mashed Potatoes / Aaloo mix it well to combine on low flame stir continuously to avoid burning then add in it Coriander leaves fine chopped & lemon juice mix all to combine & turn off the flame & keep aside to cool down.

 

Ingredients for Vada Pav assembling

Fry Green Chilli / Hari Mirch (Optional if required)

Pav

Oil for deep frying Vada

 

Preparation for Vada Pav Assembling

·       Take a pan add Oil in it & bring it to boil then place few Green chilli in a frying spatula & fry chilli for 1 minutes.

·       When frying chilli make sure to stay at distance from the pan to avoid accidents.

·       You can skip the above process if you don’t eat spicy.

·       Once done remove the chilli & place 1 pinch of salt / Namak in the same mix it well & keep it aside.

·       Grease you hand with oil then take Aaloo bhaji mixture & start making flat balls once all vada are ready heat oil in a pan deep Vada in the batter mixture & apply it throughout the vada.

·       Gently place the vada in the pan & deep fry on medium flame till light golden in colour.

·       Gently reverse the side.

·       Done ready to serve yummy Vada.

·       Take Pav make cut from its middle apply green chutney, place lassun chutney, Place Vada, again place lassun chutney & fried green chilli & done ready to enjoy.
